    Chef, made literally hundreds of liters/kilos of creme pat/anglaise. Don't waste your time with the cornstarch, whisk it through the sugar and dump it all in to the milk and eggs at the end :) only boil, temper and sweeten/thicken. You can always thin it, but if you overcook to thicken it you ruin the flavour. Yw
